Sautéed Cauliflower Recipe From The Mission Inn!

I recently had the amazing opportunity to check out The Mission Inn Hotel & Spa in Riverside, CA.  With 5 incredible restaurants, it's safe to say, we ate like kings.  I'm always on the lookout for healthy dishes with some kid appeal so when i tasted The Spanish Patios chef Alex Ramirez's sautéed cauliflower, I knew I had to get and share the recipe.  enjoy!

 

Sautéed Cauliflower

1 Head Cauliflower (Florets Shaved and Fine Chop)
1 Clove Garlic (Fine Dice)
1 Each Shallots (Fine Dice)
¼ C Dried Cranberries
1 C Baby Spinach
½ Ea Red Bell Pepper (Fine Dice)
2 T Ground Cumin
1 T Lemon Juice
Salt Pepper

1. Heat saute pan with some cooking oil
2. Add garlic, shallots, red bell pepper and sweat the ingredients
3. Add cauliflower, cranberries, spinach and continue to cook
4. Add cumin, lemon juice and season with salt and pepper to taste. Cumin can be adjusted to liking
5. Optional garnish: Cherry tomatoes, baby spinach
