Recipe: Kings Fish House Salmon
My son craves sushi. My daughter doesn’t tread beyond butter pasta. My husband is a true carnivore. And me… I can find something to eat just about anywhere. It’s more about the experience. Can I have a meal where my whole family is satisfied and I feel like I’ve had a relaxing night out?
At Kings Fish House, the answer was a resounding “YES!” from all of us. The unique and lively seafood restaurant has locations throughout Southern California including Carlsbad and Mission Valley. King’s Signature Group also operates San Diego’s popular Water Grill and the quintessential steak and seafood spot, Lou & Mickey’s.
The Fish House’s extensive kids menu has staples like grilled cheese and chicken tenders as well as more exotic dishes including fried shrimp and grilled salmon. Culinary Director, Damon Gordon shared his salmon recipe with us, which the restaurants smallest patrons can’t seem to resist.
4 oz portion skin off salmon
4oz sliced zucchini on the bias
Half lemon (grilled)
Season the salmon with salt and then grill over an open flame making sure to get good clear grill marks on the fish. The salmon will take 4-5 minutes on each side and make sure that you grill near the edge of the grate.
Season the zucchini slices with salt and place on the grill. These will take 2 minutes per side.
Place the salmon on the plate and then “shingle” zucchini next to it and then garnish with grilled lemon half.
